Okay friends, trust me when I say this salad is as tasty as it looks! It's packed with flavour and is SO easy to prepare!. I made this meal start to finish in under 30 minutes! This salmon doesn't require any marinating (although should you want to prep in advance you could marinate it to get more flavour in the salmon flesh). Now about that spicy peanut sauce... ITS AMAZING. Not sure if anyone else is obsessed with the peanut dipping sauce they give you for your salad rolls in a Vietnamese restaurant? But anyways... it's pretty much as good as that!


Serves 4

Sticky Maple Salmon

4 salmon fillets

2 tbs soy sauce

2 tbs maple syrup

1 tbs sriracha

Juice of 1 lemon

1 tbs olive oil

Salt & pepper for seasoning


Spicy peanut dressing 

1/2 cup natural peanut butter

1/2 cup rice vinegar

1/4 cup water

1/2 lime juiced

3 tbs maple syrup

2 tbs sriracha

2 tsp grated fresh ginger

2 small garlic cloves

1/2 teaspoon sea salt 


1 bunch chopped kale

1/2 lemon juiced

1 tbs olive oil

1/4 cup chopped fresh pineapple

1/8 cup crushed peanuts or cashews


Optional toppings:

sesame seeds

sliced green onions

 lime wedges

fresh basil


To make the peanut dressing, place all the ingredients in a blender and blend until smooth.

To make the sticky maple salmon, whisk together the soy sauce, maple syrup, Sriracha and lemon juice. In a large nonstick frying pan drizzle 1 Tbs of olive oil, (Tip* whenever I cook fish , I place a piece of parchment paper down  in the pan and then drizzle the oil on top of that. This helps to ensure the fish doesn't stick). Heat pan to medium- high heat. Season the salmon fillets with salt & pepper. Next place the salmon fillets skin side down in the hot frying pan. Once sizzling, pour the marinade mixture over the salmon and baste the fish with the marinade till it reduces to a thick sticky sauce and the salmon is fully cooked approximately 4-6 minutes (no need to flip the fish as the hot marinade will cook it during the basting process). 


To prepare the salad, place chopped kale in a bowl. Pour lemon juice & olive oil over chopped kale and massage with hands till kale softens (approximately 1-2 minutes). Toss kale with peanut dressing. Top salad with pineapple, crushed nuts, lemon wedges and fresh basil leaves. Garnish salmon with sesame seeds and chopped green onions. Enjoy!
